Ingredients for making sesame gajak:
Mawa – 250 grams
Mole – 1 cup
Sugar (powdered) – 200 grams
Cardamom Powder – ½ tsp
Cashew / Pistachio – 4-5 (finely chopped)
Recipe for making sesame gajak:
1.To make sesame seeds, first put the sesame seeds in the pan and put it on the flame. Stir the sesame with a spoon and fry it till it becomes very light brown. Note that after roasting well, the mole will feel slightly puffy. Now take out this sesame in a clean dry plate.
2.Add 1 teaspoon of ghee in a pan and melt it and break the khoya (mawa) and put it well. Now roast it on a low flame while stirring it with a spoon until it starts to turn light pink. When it fry well, add sugar sugar to it and stir it with a spoon until the sugar and khoya are thoroughly melted and mixed. Now add roasted sesame and cardamom powder over it and mix it well. Stir continuously with a spoon and cook on low heat for at least two minutes.
3Now turn off the heat and let this mixture cool down a bit. Now put ghee in a plate and make it smooth. After this, spread the cooled mixture to a plate and spread it well. If desired, apply a little ghee on the cylinder and roll the mixture lightly with the help of hands to make it smooth.
4.After this, garnish it by applying chopped nuts. With a light hand, press these dry fruits into the mixture. Now cut them into desired shape. Leave it like this for a while so that it gets set.
5.Take out your sesame seeds.
